Kitchen Experiments: How To Make Tamarind Juice

Hello Friends!

Though the weather has been pretty mild this winter I have been yearning for summer. Longing for longer days and even longer weekends full of possibilities and adventures with my little ones. Some of those adventures involve being in the kitchen. Anyone who has been around little kids knows that kids in the kitchen usually means more work. The fun usually outweighs the extra work.

I have recently started letting my boys help me in the kitchen. Usually performing simple tasks like mixing pancake or waffle batter and scrambling eggs. 

Today I am sharing how to make tamarind juice. This is a simple recipe and the steps are easy enough that little hands can easily tackle. Plus, you can always incorporate a little geography lesson while you're making the juice. 

I grew up drinking this sweet and tangy juice during the hot summer months in Mendocino County, Northern California. I have fond memories of peeling the tamarind shell by hand alongside my mom and even fonder memories of drinking the delicious sweet and tangy concoction. 

A little tamarind info: The tamarind pods grow on the Tamarind tree, which grows in tropical places like India, Asia, and Mexico. Mature pods are harvested and peeled to make juice, jellies, and candy. You can find the pods in Asian and Latin American markets in the U.S. You can order them from Amazon if you don't have a market nearby that carries them. 

Now let's make some tamarind juice or agua de tamarindo (in Spanish).

Gather your ingredients: tamarind pods, sugar, water.  Yep. That simple. 

Step 1. Sift through the tamarind pods. Make sure none have tiny little holes. They may have undesired guests. Gross, I know.

Step 2. Peel the pods. They should like this:

Step 3. Boil a pot of water and add the tamarind pods. Let boil long enough to soften the fruit, about 5 minutes. Turn the stove off. Add sugar to taste and stir until the sugar dissolves. It should have the consistency of a light syrup. Let it sit while it cools. The fruit will further soften and separate from the seeds. 

Step 4. At this point you can either pour the light syrup in a pitcher of ice and add water to dilute the mixture or strain the syrup mixture into a bowl and then adding the strained syrup into a pitcher of ice and add water to dilute the mixture. I personally prefer the non-strained mixture but if you are serving this to guests you might want to prettify it a bit by straining it.

Step 5. Serve it to your guests

Step 6.  Serve yourself a glass of this sweet tangy goodness and relax for a few minutes. Be prepared to be asked for refills!  ;-)

Happy St. Patrick's Day!

Hello Friends!

Just checking in to wish everyone a happy St. Patrick's Day! 

For those who are curious I am neither Irish nor married to anyone remotely Irish.  But the Irish were and probably still are in Mexico and I hail from parents who were born and raised in Mexico so that's reason enough to celebrate St. Patrick's Day. Not to mention that it would be utterly un-American to NOT celebrate St. Patrick's Day. Most importantly, who can deny the powerful lure of anything green?!

I popped in to Bit of Ireland Bakery in San Leandro, CA this weekend and walked out with this little guy much my boys' delight.

Out and About: Yosemite In February

Hello Friends!

I know exactly what you're thinking: Yosemite, again?! And the answer is a resounding YES!

Mr. Other Half's birthday celebration request was to spend his birthday in Yosemite. So that's what we did and let me tell you, each visit gets better and better. My oldest A loves riding his bike without having adults (ahem, ME) yelling at him to slow down or stop (which I normally do when we ride around our neighborhood). I totally understand because I, too, love the freedom of riding a bike, of the crisp air against my face, and the wind blowing my hair. It's so liberating. 

The boys had a great time and that means that we, the adults, had a great time! ;-)

I had a difficult time narrowing the number of photos. Then I thought, why narrow it down. Heck, this is my blog!  So here are more photos than you probably care to look at but, again, it's my blog! ;-) If you do decide to hang around, thanks!  

We stopped by the side of the road to have an impromptu picnic. 
Upon arrival we grabbed the kids and took them for a walk. Let's just say it was a very badly needed walk for the parents as much as for the kids.  Whew!  Sometimes videos, books, sleep, and snacks is not enough to keep the kids quiet for hours when cooped up in a moving vehicle.
The light was so beautiful that afternoon. I regretted not having brought a film camera to practice capturing some of this magnificent light. -sigh-
 My youngest, B, decided he wanted to run through the meadow without his shirt.  Said he found it liberating. I was tempted to do the same thing...  ;-)

The following morning we went on a hike to Yosemite Falls. A asked that I take a portrait in front of the Falls. Let's say his cooperation was somewhat lacking. 

B loves collecting sticks. Everywhere we went he added to his "coh-lection" to the point that he had to decide whether to hold his sticks in the bike seat or hold on to the bike seat. The sticks won out. They were far too precious for him to leave behind.  :-)
The light at the Ahwahnee Hotel porch was absolutely divine.  Again, I wished I had brought along a film camera. -sigh- Lesson learned, right? Right!
We took a bus to the skating rink near Camp Curry and caught this little guy in a quiet moment.  These moments are so fleeting!   

The boys found a fort on our the last morning. The steam rising from the wet wood was beautiful.  
I lack imagination when it comes to getting birthday gifts for my husband. He's not picky. Every year I ask what he would like for his birthday and he always answers the same, he has everything he needs. I get the same answer each Christmas. I got him this t-shirt and thought it would be perfect for him in Yosemite. Turns out in our ten years together (gasp!) this is his favorite gift.  Ha! :-)
For those who are curious I found this t-shirt on Etsy from seller Truly Sanctuary . They have whimsical designs on baby onesies and t-shirts. Plus, I'm a sucker for small indie shops and this one has an interesting story to go along with their fun designs. 
No self-respecting person would end a camping trip without a fuel stop at some fast food joint or two. We stopped at In-N-Out for some fortifying hamburgers and fries. Which, if you're not familiar with this place, is all they serve.

Valentine's Crafting: Part 2

Hello Friends!

Here is my second installment of the Valentine's crafting sessions I had with my two boys. I shared the dinosaur photo Valentine's card I made for my oldest in my last post. Today I will share the Valentine's rings I made with my youngest. Though truth be told I made while he ate the chocolates!  

I had planned to simply adhere a chocolate heart to paper with a simple printed card that said something like, Happy Heart Day Valentine! but I promptly let go of that idea (and quickly proceeded to eat the chocolate hearts) when I saw this fantastic post from Willowday!  

I went to my local craft store after my morning workout to get some silver metallic pipe cleaners (I may or may not have planned the workout around the store hours).  :-o

These were a hit!  I'll be attaching a simple label as Willowday suggests and calling it a day. Easy and fun. My youngest absolutely loved "helping" me make these and was willing to sit for me so I could snap these photos.
